  1. Fungi – this beauty is the country’s national dish and is pronounced Foo-Ji. It’s usually served for breakfast. The dish itself is made out of cornmeal that is cooked with water, peppers and other spices. It has the consistency of mashed potatoes.
  1. Conch – this dish is pronounced Conk. The dish itself is made out of the meat found in the spiral shells. It can be consumed raw and in curry form but in Antigua it’s famous for being served as fritters.
  1. Ducana – The dish Ducana is very much similar to the popular Mexican dish Tamales. It is made by wrapping up grated sweet potatoes and coconut into a banana leaf and then steamed. You can make them either sweet or spicy depending on the spices you use when mixing the batter together.
  1. Black Pudding – this dish is also known as rice pudding and is influenced by the British. The dish is made from pork blood, it is the blood that is mixed with organ meat, rice and seasoning.
  1. Johnny Cakes – this isn’t really a cake as the name of the dish may insist. It’s actually fried balls of bread and is eaten usually as a breakfast meal. These breads aren’t seasoned to be sweet or spicy just regular salt and pepper. They can be consumed with sweet and spicy sides to one’s preference.
  1. Saltfish – this dish is usually made with white fish mostly cod. The fish is preserved in salt for a certain time period and then it is cooked in onions, tomatoes and garlic. This dish is served as a side dish with most meals and is a favorite amongst the locals.
  1. Black Pineapple – this is the official fruit of the island, it’s even on the island’s coat of arms. The fruit is considered to be one of the sweetest pine apples in the world. It’s also a little hard to spot and if you aren’t a local then you may need a local to help locate the fruit.

  1. Seasoned Rice – this dish consists of rice that has been made with celery, onion, pork and red beans. There are of course different meats that can be used but pork is an island favorite. The pork fat is what gives the rice its favour hence it being called seasoned rice.
  1. Souse – this is a cold soup which is made with pickled pig feet and onions, garlic, hot pepper, lime and seasoning. This is served in any local homes and many restaurants.
  1. Goat water – this dish has a misleading name and a lot of people may think this is a goat soup but actually what this means is goat curry or even a heavy stew. The goat meat is cooked on the bone itself marinating in cinnamon and cloves for hours.
